BBQ Chicken Corn Bread Bites

Potlucks at work always put me into a tail spin. Too much pressure! Everyone knows I cook, so I feel like they expect some Iron Chef type dishes. To compensate, I usually buy a bag of Wavy Lays and store bought onion dip. No, not really. But I think about it every time.

This weekend, I was terribly uninspired when I was shopping for today's potluck. Paula Deen to the rescue. I found this recipe in a cookbook of hers I picked up at the Paula Deen store in Tunica, Mississippi. What, you didn't know I went to the Paula Deen store? That's right, I was boycotting my blog at the time. Not only did I go to her store, I went to the Paula Deen Buffet. It was everything I dreamed it would be. But that's a story for another time.

Back to the recipe. I just wasn't feeling the whole cooking thing this weekend. Which is why this recipe appealed to me. Three ingredients. Three. Corn muffins, cooked chicken, and BBQ sauce.

Here we go...

Use your favorite corn bread mix - I used Marie Calendar...Jiffy would work just as well.






Bake in your mini muffin pan - should make 24.



You could also make these in regular muffins for more of an entree than an appetizer.

Let muffins cool completely, then with a small paring knife, cut out the center of muffin, leaving about 1/4" shell.



Shred or chop your cooked chicken. I used a store bought rotisserie chicken. You'll need about 2 cups, give or take.





Add to this about 1/2 cup bottled BBQ sauce. Mix well.



Now, using a small spoon, fill each muffin shell with the BBQ chicken mixture.



Imagine a picture here of all the mini muffins filled with BBQ chicken mixture. Because this was for a potluck at work, I filled the shells at work so the muffins wouldn't get soggy. And I totally spaced taking a picture of the finished product.

All in, this took less than 30 minutes from start to finish. And they were a hit at the potluck.

Hi, my name is Christine. I used to blog here. Then my lovely daughter borrowed my camera on a hiking trip and DROPPED it. I didn't replace it at the time, quite frankly because I was ticked off. And I felt that blogging about my cooking without posting pictures was kinda...lame.

But I wanted to list some items on EBay this weekend, and needed pictures to post. So I finally broke down and bought a new camera. But Shhhh, I didn't tell the girls about it!

So the lovely silverware is posted on EBay. And I'm back on my blog. I've missed you. Seriously, I have. So much so that you may notice a "Follow me on Twitter" link on the left sidebar of my blog. I really don't know much about Twitter, but we are using it at work, so I figured I should probably figure this stuff out. I promise not to post inane Tweets about my boring daily life. Okay, truth be told, most of my Tweets will probably be inane. It's hard to post thrilling Twitter updates when your life is inane.

To prove my last sentence, I actually looked up the definition of inane:

1. silly – irritatingly silly or time-wasting
2. insubstantial – empty, insubstantial or void

Yup, I used the word correctly.
